Mixed veg curry is simple and healthy curry because vegetable are added into it. We can say that it's a ideal of North Indian curry with roti or chapati or plain rice. In this recipe you can add you're favourite veggies and make the dish more delighted and even a yummy.
In this mix vegetable recipe i have used veggies like potato, cabbage,cauliflower, capsicum,french beans, and capsicum, but this recipe is completely open ended and can make easily and more best part in this mix veg curry is you can used the veggie which is all time available in kitchen.
I have also make the yummy dish of paneer with is also go with roti or rice.

let me share some my experience when i make this Mixed veg curry, When i am felling hungry and my mom went out at that time i though of making some curry and basically those vegetable are available at home. By using those veggies and adding some spices and make this curry, but first time it was not self satisfaction then again i made for my family member i am little bit worry about the dish but guess what i have a dish next time deliciously.
Guys this just i want to say when your at home make a simple and yummy delicious dishes and first time you don't get it try one more time then you will get the recipe.
Well when guess are at home you can make this simple and easy Mixed veg curry recipe and serve them. This basically love by everyone, it may be kid's or younger.
Now let see hoe to make Mixed veg curry step by step:
Step 1: Take a pan add 2 dry red chili, add coriander seeds 1 tbsp, add poppy seeds 1 tbsp,add cloves 6, add 1/2 tbsp sesame seeds,add desiccated coconut,add 1 bay leaves,add small cinnamon stick,add black cardamon mace, add green cardamom then roasted them for a minute.
Step 2: Then grind all the roasted spices and make a powder of roasted masala.
Step 3: Take a pan add 2 tbsp oil heat it then add 1 cup chopped onion,add 1 cup chopped tomato,add few cashew fry it for 2-3 min.
Step 4: After that grind them into a fine paste.
Step 5: Take a fresh pan add 2 tbsp oil heat it then add 1 cup chopped carrot,add 1 cup chopped potato,add 1 cup chopped cabbage,add 1 cup chopped cauliflower,add few french beans fry for for a 2 min. Take it out
Step 6: Then fry few capsicum and few green peas for 2 min then take them out.
(I have you this vegetables. You can even add you're favourite vegetables even.)
Step 7: Add 2 tbsp oil on that pan, then add 1/2 tbsp cumin seeds,add 2 tbsp red chili powder,add 1/2 tbsp turmeric powder mix well,then add the bended paste (of onion, tomato and cashew) then mix well and cook for 2-3 min.
Step 8: After that add the all fried vegetables and salt to taste mix it then add 1/2 cup water then add 2 tbsp roasted masala mix it and Cook for 2 min. After that add 1 tbsp butter.
At last the yummy delicious Mixed veg curry is ready to serve it!!
For Making Roti / Chapati
Step 9: Take a bowl add 250 gm wheat flour, add salt as per taste, then add 1/2 water into the flour mix it properly.
( don't add the whole water at the time, add water little by little and knead it and make a soft dough then rest for 15 min)
Step 10: After 15 min knead it again for 2 min. then take small portion of dough and roll into ball then dust it with little plain flour.
Step 11: Then roll it with rolling pin, then sprinkle little flour again then round it again ( don't press at the time of rolling do it gentely )
Do the same for left over dough.
Step 12: Take a tawa heat it then place a roti cook for 3-4 sec one side then flip it again do the same it again.
You can have this roti with mix veg curry and also serve to the family member or guess.
