What is raita?
Raita is an Indian dish made with yogart, spice powder, herbs and some veggies like onion cucumber and carrot. Indian raita is accompanied with briyani, pulao or kabbs. Most often it is made with fresh veggies of choice , mild spice powder like cumin and herbs like coriander leaves and mint leaves.
It is a easiest dish to make , we don't require much effort . It all depends on the kind of yoghurt you use- better the quality , better will be the taste and consistency. you can even make the yoghurt at home. In this we used even veggis can also used nut milk curds to make raita.
Well the yoghurt play an important role, You should use yoghurt that is either set at home using full cream or from a local dairy instead of a packaged product. We even get Yoghurt at sweet shop which is basically a good one, even i buy the yoghurt/curd from the nice sweet shop, where the consistancy of the curd is good quality.
So, now let see with the help of Yoghurt / curd how we can make Raita at home same like restraint style step by step
Step 1: Take a bowl add 500 gm curd, add 1 cup water used whisk, keep the consistency to semi thick.
Step 2: Now add 1 tbsp salt and 1/2 tbsp sugar mix it well.
With that curd only i am going to make 4 different type of raita
Onion Raita
Step 3:Take a medium sized onion 1 chop it finely, take a 1 medium sized tomato chop it finely( removed the seeds ), take a small 1 carrot grate it , take a coriander leave chop.add all those things in bowl.
Step 4:Then add salt as per taste, add 2 cup curd mix well, add black salt 1/4 tbsp, add 1 chop green chili, add 1/4 roasted cumin powder mix everything well
The Raita is ready to serve it!!
Cucumber Raita
Step 5 : Take a bowl add 1/2 cup granted cucumber, add 1/2 cup of curd , add green chili, add little coriander leaves, add black salt, add roasted cumin powder mix well
Step 6 : The cucumber raita is ready to serve!!
Bhindi Raita
Step 7: Take a pan add 4 tbsp oil late heat it , then add chopped bhindi ( ladies finger ) fry it till colour turn into brown color, then let it cool it.
Step 8: Then take a bowl add those fry bhindi , add 1/2 cup curd , add 1/2 tbsp of roasted cumin powder, add 1/3 tbsp of black salt, add 1/3 tbsp of rad chili powder mix it , add coriander leaves mix it
The bhindi raita is ready to serve it !!
Fried Veg Raita
Step 9: Take a pan add 1 tbsp oil heat it then add 1/3 tbsp mustard seeds,add 1/3 tbsp cumin seed,add 8 to 10 curry leaves saute it, then add 1 chopped green chili,add 1/4 cup chopped onion,add 1/4 cup chopped capsicum, add 1/4 cup chopped tomato fry all for 4 min only ( do bot over cook the vegetable)
let it cold completely before serving
Step 10: Take a serving bowl add the veggies, add 1/2 cup of curd in above of it,sprinkal 1/3 tbsp roasted cumin powder, sprinkal 1/4 tbsp black salt mix it well
The fried Veg Raita is ready to serve it !!
The above 4 raita is easy to make it and those are very simple.
