Kacha Aam chutney recipe - Step by step 

Kacha Aam is also known as Raw Mango. As it's the Summer season we all love to eat Mango mores whether it's a raw or normal mango. 

So, with the help of raw mango, we can make many kinds of the recipe like chutney, chaat and many people love to eat by adding some salt and followed by sprinkling some red chilli powder. 

Well with the help of normal mango we can make Aamras, mango shake, mango ice cream etc. These all item are favourite for kids more than adults. In this summer season, many people are craving to eat more mango. 

The mango is also known as the King of fruit. And during these days as we all are facing a pandemic situation, we avoid the outside food and try to make most of the food item at home only. 

So, This is one of the raw mangoes recipes. I am going to share the recipe for Kacha Aam chutney it also knows as Raw mango chutney. In Kolkata, the people eat this chutney with steam got rice at the last. It's complete the whole source of the food at the end.

They are many variables of the recipe of chutney like tomato chutney, imali chutney ( tamarind), raw mango chutney etc.

About recipe:

Kacha Aam chutney is raw mango chutney it's a bengali style recipe in which few ingredients are used and many people make raw mango chutney differently.

The speciality of this chutney is it's made with mustard oil and mustard seeds and bhaji masala is used. This masala we will easily get in the market or you can easily make at home itself.

How to make Bhaji Masala:

Take a pan to add 1 tbsp fennel seeds, add 2 tbsp cumin seeds, add 2 1/2 tbsp coriander seeds, add 6 to 7 curry leaves, add 1 cardamom, add 1 black paper, add 6 to 7 cloves, add 1/2 of paper corns, add 10 to 12 dry red chilli add 2 bay leaves, and add 6 one ich cinnamon roast them for few sec.

Then grind all the spices in a mixture grinder by adding 1 tbsp salt and 1/2 tbsp dried mango powder and 1/4 tbsp of black salt.

Grind into a fine powder and Bhaji Masla is ready.

You can make a Bhaji masala at home by following the above instruction.

I have used this masala to have a nice taste of the chutney and in this, I have used sugar around 2/3 cup. You can use it even according to your taste also. Even you can use jaggery in place of sugar.

Ingredients required:
  • 1 large raw mango
  • 1/2 tbsp salt
  • Red chilli powder
  • 1 to 2 dry red chilli
  • 1/2 tbsp mustard seeds
  • 1 tbsp mustard oil
  • 1/4 tbsp turmeric
  • 1/2 tbsp ginger
  • 2 tbsp of water
  • 2 tbsp of sugar
  • 1 tbsp bhaji masala

Now let's see How to make Kacha Aam / Raw mango chutney recipe step by step:

 Step 1: Firstly, chopped 1 large mango lengthwise.

Step 2: Then sprinkle 1/2 tbsp of salt and red chilli powder mix and set aside for 10 min.

Step 3: Now take a pan add 1 tbsp mustard oil heat it

Step 4: Then add 1 to 2 dry red chilli, add 1/2 tbsp dry mustered seeds mix ( allow to splutter)

Step 5: After that add marinated mango, add 1/4 tbsp turmeric powder mix it well.

Step 6: also add 1/2 tbsp pounded ginger mix it well and add 2 cups of water.

(Bring it to a boil and cover and cook for 10 min)

Step 7: Then add 2/3 cup of sugar mix it well

( cook on high flame unto chatni thickness to desired consistency) 

Step 8: Also add 1 tbsp bhaji masala mix it.

At last, the Kacha Aam chutney is ready to serve its.
