 Rasmalai recipe - step by step:

Rasmalai sweet is one of the common sweet dishes which is loved by all age groups. Some love it because of the softness of chenna and mostly it's a common sweet dish which all like to add it there any occurrence


The Ras malai is originated from the West Bengal state of Kolkata and Bangladesh and got popular in many states. The different states make Ras malai differently by adding a bit different ingredient. But anyhow it tastes tasty as ras malai only.


The Rasmali is named and pronounced differently in a different states some are like Rossomalai ( Bengali), rasamalei (Odia), Ras Malai (Urdu and Hindi).

As Ras malai is loved by everyone so most people want to make rasmalai at home. But many of them think that there can't prepare at home, but the truth is we can make Ras malai at home the same as Halwai style.


I am sharing the Ras malai recipe which can be prepared at home just need to follow few simple steps and I will give some simple tip and tricks with help of that you can easily make it!!


About recipe: 

As ras malai is made with chenna and sugar. At the time of making chenna, we need to add lemon water overhear I used lemon water you can even use vinegar also. The main important thing is after stairing it keep for rest for at least 2 hours. 


The second is at the time of bowling milk for the colour of milk I used turmeric because it's good for health. If you want you can use Kesar or yellow food colour. 


Last but not least the chenna need to get mash very well and need to make a soft dough. For that, I have added a little bit of refined flour because at the time of making the ball and boiling it the ball should not break it.

Ingredients required: 

  • 2 litre milk
  • Sugar
  • 1 tbsp maida/ white flour
  • 7 to 8 slivered almonds
  •  8 to 10 pistachios
  • 1 tbsp green cardamom
  • Turmeric 


Now let's see How to make the Ras malai/ Rasmalai recipe step by step:

Step 1: Firstly take 1 litre of milk and bring 1 boiling.

( then off the flame)

Step 2: Now take 2 tbsp lemon juice mix with 2 tbsp of water, then add that to boiled milk.

(At the time of adding add little by little lemon water and keep mixing simultaneously)

Step 3: After that strain (water and chenna by using plain cloth)

Step 4: Then wash the chenna by using cold water, then quiz the water and rest it for 1 or 2 hours.

Step 5: Now take 1.5 litres for bowling, add 1 pin turmeric and boiled the milk nicely 

( Then add 100gm sugar mix it and cook well

 For 15 to 20 min)

Step 6: Then add 7 to 8 slivered almonds, add 8 to 10 pistachios, add 1 tbsp green cardamom powder mix it and cook well.

( After that transfer that to boil and let it cool at room temperature only)

Step 7: Now take the chenna grumble it, then mash well( by using a hand pan for 10 to 14 min)

Step 8: Add 1 tbsp refined flour and mash it well (to make a soft dough)

Step 9: After that divides them into equal proportion, then make a smooth ball ( like a roti)

Step 10: Take a pan to add 3/4 cup sugar, add 3 1/2 cup water and boil well.

Step 11: Then cook those ball in the sugar water.

( cover with pan and cook for 5 min then flip it and boil for 8 to 10 min)

Then off the flame and let it cool as per room temperature

Step 12: Then dip those boil bowls into cook milk.

( let it rest for 2 to 3 hours)

Then Ras malai is ready to serve it!!
