Mutton Biryani recipe - step by step

Briyani is one of the popular dishes in Hyderabad. It's nizam time biryani which is so much famous in Hyderabad only. As we know now we get biryani around the city and status but each and every state makes a different way of biryani. But perfect biryani you will get in Hyderabad only.


They are mainly 2 types of biryani that are Mutton Biryani and Chicken Biryani. Nowadays Non- vegetarians make biryani on special occasions like Marriage, anniversaries, etc. Where in vegetarian they make pulao or paneer biryani. 


Well, when the teenage group goes out they prefer biryani only. In Hotels, they served biryani with Rita and Salan only. It doesn't require any side curry because it gives a complete taste of its own only. And many people make a different type of biryani at home by adding some extra spices. The recipe of Mutton biryani which I am going to share is very simple and easy in preparing at home same as the restaurant-style.

Mutton Dum Biryani recipe



About recipe:

Mutton Dum Biryani is a dish which is made with mutton. In this recipe, I didn't use any extra ingredients only some basic spices are used and it's very simple in making and you just need to follow 8 steps and the biryani is ready.


Firstly, before making the biryani you need to soak the rice for 1/2 hour. Till rice soak, you can cook the mutton. Most people wash the mutton but I have not to wash it because to give a mosture. And I have 1st cook the mutton in Kadai then have transferred to Press cooker. If your mutton is 1 day old in that cause you need to whistly it more for cooking, I have taken the fresh mutton that by I have Whistly it for 3 to 4 only in the medium to low flame.


I have also added Tomato Puree, You can make the Puree at home by grinding 4 to 6 tomatoes, or else you can purchase it from the grocery store and The main ingredients are Kerwa water and Briyani Masala without this the whole biryani is incomplete. You can use Dubar Kerwa water and Everest biryani masala.

Ingredients required:

  • 1 cup Basmati rice
  • Kerwa water
  • Briyani Masala
  • Desi Ghee
  • 500 gm mutton
  • Kesar
  • 5 to 6 onion
  • Tomato puree
  • 1 tbsp ginger and garlic paste
  • 1/2 tbsp turmeric
  • 1 tbsp red chili powder
  • 2 tbsp coriander powder
  • Bay leaves
  • jeera
  • Cardimon
  • Dal chini
  • Coriander leaves
  • Mint leaves
  • salt

Now let's see How to make MUTTON Biryani step by step:

Step 1: Firstly take a bowl to add  1 cup basmati rice and soak it for 1/2 hour

Step 2: Then take a Kada add oil 3 tbsp heat it then adds chopped onion fry the onion till the color turns into brown color

( After it fried take a tissue paper place it and let it be cool )

Step 3: On that same Kada  I am going to add a few fried onions, add 500-gram mutton, add 1/2 tbsp turmeric powder,1 tbsp red chili powder, add 2 tbsp coriander powder, add 1 tbsp salt mix all well. Also add dal chini, add black pepper, add laung, add cadmium seeds, add 1 tbsp jeera Mix it

(Cook mutton till it becomes roast )

Step 4: After that add 1 tbsp ginger and garlic paste, add homemade tomato puree mix it well, and cook for 2 to 3 min then add 1 tbsp biryani masala, add 1 tbsp Kasuri methi mix well 

Step 5: Now take a Presser cooker transfer mutton into it and also add 1 cup of water and cover it and cook till 3 to 4 whistle from medium to low flame.

( After 4 whistle let it cool )

Now lets prepaid rice:

Step 6: Take a cooking bowl add 3 cup of water heat it then adds 5 to 6 cardamom, adds 1 bay leavees, adds black pepper, a few Laung, a few jeera, and a little bit of salt.

Step 7: After the water boiled add soaked rice and stir it once

( cook 50 to 75 percent only also strain the water)

The rice is ready

Step 8: Now add those rice into the mutton as a 1st layer, add Kesar water, add fried onion barista, add a few coriander leaves, add few mint leaves. Now make the 2nd layer in that also ad some coriander leaves, add Kesar water, add fried onion, add mint leaves, add 1 tbsp biryani masala, add1 tbsp desi ghee and add 1 tbsp kewra water, add 1 tbsp lemon water cover cook with plate and top of that keep 1 big bowl of water.

( See that the steam should not go out and cook for 15 min  in low flame after 15 min turn of the flame and let it cook for 10 min in hot steam only in the same way)

After that, you can see the delicious Mutton Biryani is ready to serve it !!
