Soft Malai cake recipe - step by step

Malai cake is most famous in Pakistan, their prepaid this dish during the Eid festival. And it's got famous in all different cultures even. This is a different kind of cake which is made with homemade rabari. 

Well, they are a few people who don't know to make malai cake with rabari. They think it's difficult to make but it's not. It's very simple and easy just you need to follow some tips and tricks at the time of preparing.

I make this soft malai cake during the festival and also on some special occasions like on Birthday Party, If anyone gets an achievement etc. It's not compulsory to prepay during the festival only you can be prepaid anytime you want.

You can even serve this as a dessert with there is gest at home and can enjoy it with everyone.

About recipe: 

Malai cake is an authentic and different kind of cake the difference between this and other cake is it's just made with rabari. In this, the batter plays an important role and the rabari even. 

In preparing this recipe I have used saffron strands (in that I have soaked 8 to 12 kesar in milk for 10 to 15 min). The reason I have used this because to get beautiful and natural colours on the cake. If you don't like kesar then don't use it's an optional one.

I have used low fated milk and at the time of Garnishing, I used almond and pistachio if you want you can use your fav dry fruits even.

Some tips and tricks are:

  • Make the batter well
  • Cook the cake at least for 25 min then check it with the help of a toothpick
  • Depending on the consistency of the cake cook according to that.
  • At the time of making rabari keep stirring it till it's cook well.
  • Wielding adding sugar I have used 3.5 tbsp sugar, even you can add according to that.

Ingredients required:

  • 1/3 cup oil
  • 1/3 cup curd
  • Sugar
  • 1 cup all-purpose flour
  • 1 tbsp breaking powder
  • 1/2 tbsp breaking soda
  • Milk
  • Safford
  • Almond
  • Pistachio
Now let's see How to make the Malai cake recipe step by step:

Step 1: Firstly, take a bowl to add 1/3 cup oil, add 1/3 cup curd, add 1/2 cup sugar powder mix it well.

( mix at least for 1 min)

Step 2: Then strain all-purpose flour for 1 cup, add 1 small spoon breaking powder, add 1/2 tbsp breaking soda mix well.

Step 3: At the time of mixing used milk. And make a smooth batter. I used approximately 1/2 cup +4 tbsp milk.

Then the cake batter is ready. Flower consistency 

Step 4: Now take a pan add 1.5 glass of water, then place a stand.

(Cover and heat it on medium flame till water starts boiling)

Step 5: Take a mould and grease it with oil, then shift the batter into the mould.

(Tap it a little bit)

Step 6: When water starts boiling then place the mould in the pan and cover it.

(Cook on a low medium flame for 30 to 34 min)

Till take become ready let's make rabri

Step 7: Take 1-litre milk, add sugar 3.5 tbsp, add 1/2 tbsp coriander powder, add saffron strands mix it.

( Boil it on high flame till milk start boiling)

Step 8: After it starts boiling cook it on medium-high flame till it reduces to half while continuously stirring. Cook almost for 20 min.

Step 9:  Now it's cooked well and let it be cooled

(After it cooled the rabri is ready)

Step 10: Now used a toothpick to check the cake whether it's ready or not.

(After 30 to 35 min the cake is ready, then let it cooled for a min)

Step 11: After that take a fork or knife and pick the cake, then pour the prepared rabri on the cake.

At the end for garnish, I am using almonds and pistachio then keep the cake in the fridge for hours so, that it gets cooled.

At last, the Soft Malai Cake is ready to serve it!!
