Gravy or Salan is the dish that goes with Briyani or Pulo. Most of the time when we would order Hyderabadi veg biryani in the restaurants there, it would always be accompanied by the salon and raita by the side.
As I stay in Hyderabad and I went to many restaurants over there all I have seen was the salon was the compulsory side dish served with Briyani, Fried rice, Jeera rice, and Pulo. Anyone who is eating the biryani some side dish should be there to make that dish more delicious, for that the gravy is very much compulsory.
Well, this recipe was requested by one of my friends to make the Hyderabadi style salon for the side dish. For making this dish we required fewer ingredients and can be made very easily.

Now see How to make Gravy\ Salan step by step
Step 1: Take a pan add 2 tbsp peanut ( dry roast ), add 2 tbsp sesame, add chopped dry coconut 2 tbsp or sliced then roast in low flame. ( let turn into golden color )
Cool completely
Step 2: Take a pan add 2 tbsp oil, add chopped onion half cup, add 1 tbsp ginger and garlic paste saute well.( till color change ), add 1 cup chopped tomato again saute well, then add 2 tbsp chopped mint saute well ( soft and mushy )

Step 3: Then after cooling takes a mixture grinder, add them to the grinder and also add water half cup blend it a smooth paste.
Step 4: Then take a pan add 2 tbsp oil, add 1 tbsp cumin seeds, add 1-inch cinnamon, add 2 pods cardamon, add 1 bay leaf saute ( low flame) till it turns aromatic, then add masala paste saute for 3 min.
Step 5: Then add turmeric powder 1/4 tbsp on it, add 3/4 tbsp chili powder, add half tbsp coriander powder, add 1/4 tbsp cumin powder, add half tbsp garam masala, add 3/4 tbsp salt saute well. ( 4 min)
Step 6: After that add 2 cups of water on it mixed well till it comes into perfect consistency ( boil for 10 min), the oil separates then add finely chopped coriander leaves mix well.
The side dish of biryani and pulao is ready to serve it !!
